Healthy Marinated & Grilled Zucchini Recipe

Summer is not over yet and neither are zucchini. That’s a really good side dish. You can prepare it up to a week in advance or few hours before. It’s easy to make, healthy and refreshing.

INGREDIENTS

  • About 5 tbs Extra virgin oil

  • 1 lbs zucchini (about 2 zucchini) peeled and cut lengthwise

  • 2 gloves garlic minced

  • 1 tbs spoon red wine vinegar

  • Handful of sliced basil leaves (can substitute with mint or coriander)

  • Salt & pepper

INSTRUCTIONS

  1. With olive oil on medium high heat, grill the zucchini about 3 minutes on each side with olive oil or until cooked through

  2. Transfer to a serving dish (or Tupperware if for later consumption) and sprinkle with salt

  3. Whisk together vinegar, garlic and olive oil (about 3-4 tablespoon)

  4. Season with salt & pepper and poor the vinaigrette over the zucchini and add basil

  5. Let stand one hour at room temperature before serving
